MENU PLAN MONDAY–January 16-23

Wow!  My first week back to menu planning and it went so well.  Now if every week would be just like that, my life would be so much easier!  I followed my plan every night and I loved the new recipe I tried – the Blackened Salmon Soft Tacos.

This week I have two new recipes to try and hopefully they will be yummy, too.  My menu for this week is as follows:
Monday- Breaded Chicken Breasts, Mashed Potatoes, Spinach salad
Tuesday- Leftover night
Wednesday- Thin Spaghetti & meatballs in tomato sauce with garlic bread
Thursday- Tacos served with Spanish rice
Friday- Pizza Night
Saturday –  Herb-roasted Salmon and Tomatoes (Woman’s Day, Feb. 2012 issue)
Sunday – Shredded Barbecued Chicken Sandwiches (Fitness Magazine, Feb. 2012 issue)

  1. My SIL brought the shredded BBQ chicken from Fitness magazine over for dinner on Sunday. It was SO good! I hope you like it, too.

  2. Thanks for stopping by and leaving a comment! I finally had the BBQ chicken on Sunday and I agree it was good. My husband enjoyed it as well. And, the best part was that it was so easy to make!
